Biolea Chefs outside the kitchen seek the simplicity of the fire. The smell of sourdough bread in the wood-fired oven, exploring our land, seasonality and traditional sustainable way of village life. Our guests will have the chance to discover flavors of the past while at the same time “taming them” through modern techniques.
We welcome our guests with a glass of wine, tour of our olive mill and of course an olive oil tasting. During the cooking class we will make hand made “kalitsouni” cheese pies and fry them in olive oil on open fire. We will then explore traditional cooking in wood-fired oven such as hand made sourdough bread, stewed lamb and vegetables in clay pots while at the same experiencing the ancient art of “symposion”.
